Hearty Fish Pie

Ingredients:

150g king prawns

2 cod fillets

2 salmon fillets

400g potatoes

30g grated cheese

100g garden peas

3 tbsp corn flour

450ml semi skimmed milk

Fresh dill

2 bay leaves


Method:

  • Pre-heat your oven to 180. Add you milk into a pot and let simmer. Add the bay leaves and 2 tbsp chopped fresh dill, season with salt and pepper. Meanwhile mix your cornflour with 3tbsp water and mix until a paste has formed, add this into the milk and stir thoroughly until it thickens.

  • Chop your fish into cubes and add into the milk mixture, stirring through.

  • Add the peas, mix through, remove bay leaves, then pour into an oven proof dish. Put in the oven for 15 minutes.

  • Meanwhile peel and chop your potatoes and boil until soft. Once soft, drain and mash your potatoes, mixing through the cheese then take the dish out of the oven and layer the cheesy mash on top. Place back in the oven for a further 20 minutes, until the pie is bubbling.

  • Remove from the oven, season with salt, pepper and sprinkle some more fresh dill.

  • Serve with extra vegetables. Makes 3 portions.
